With summer in full swing in Joburg, and lots of time on my hands to play around in the kitchen, my ice-cream experiments are continuing. Today’s recipe share is my absolute favourite, this Turkish Delight ice-cream which I can’t get enough of! If you’re a fan of this gorgeous, rose flavoured Middle Eastern confection, then this is the dessert for you!
Here’s what goes in
- 4 egg yolks
- 1 cup double cream
- 1 cup full cream milk
- Half a cup of castor sugar
- Half a cup of Turkish delight, chopped into small cubes
- A dash of really good quality rose water
How to do it
Heat the milk and cream in a saucepan, without boiling. Beat the egg and sugar together and gently stir this into the cream, constantly for 8-10 minutes until a custard/thicker mixture starts to form. Once this has cooled off a bit, add the rose water and churn the mixture in an ice cream maker. Add chopped Turkish Delight halfway through. Freeze in a conventional freezer for at least 4 hours after churning.
