The weekend is fast approaching so perhaps you’ll have time to fill up your cookie jars! For the peanut butter lovers, here’s a decadent peanut butter cookie recipe to which I’ve added some crunch with rolled oats. There is so much good stuff in them they almost feel healthy.
Here’s what goes in
- 3 quarter cup of butter (125g), softened
- 1 cup of brown sugar
- Half a cup of peanut butter
- 1 egg
- 1 and a half cups of cake flour
- 4ml of bicarbonate of soda
- 2,5ml of salt
- Half a cup of rolled oats
How to do it
In a food processor, blitz the butter, sugar and peanut butter together.
Then add the egg and all the remaining dry ingredients and mix again until well combined. Now roll your cookie dough into a ball, cover and refrigerate. This will just firm it up a bit and make it easier to work with.
After half an hour, take the batter out of the fridge and flour your surface and hands. Roll into small balls and then flatten them with a fork, perhaps on a lined baking tray. They should be spaced 2-3cm apart so that they can “grow” in the baking process.
Bake 180°C for 12 to 15 minutes.
