Here’s a quick pasta sauce that you can make without too much time or effort. Perfect for a Monday, especially if you’ve joined the #meatfreemonday movement!
Here’s what goes in:
2 tins of chopped, peeled tomatoes
half a cup of chopped red and yellow peppers
half a teaspoon of crushed garlic
half an onion, chopped
olive oil for frying
3 cups of water
a splash of white wine
a pinch of mixed herbs or origanum
Salt to season
A dash of cream
Basil leaves and Parmesan cheese
How to do it:
In a heavy-based pot, fry the onion and garlic in the olive oil until the onion is soft and appears slightly transparent. Add the peppers and fry until cooked through. Now add the remaining ingredients – tomato, water, wine and seasoning – and allow to simmer over a low heat, stirring frequently.
After about half an hour, you should have a slightly reduced, thickened pasta sauce that clings to the back of a spoon. Blend this in a food processor (unless you prefer it chunky) and add a dash of cream. Serve over your favourite pasta and garnish with fresh basil leaves. Shaved Parmesan is a delicious addition!
