As we draw closer to Christmas Day, you might be thinking of things that you can prepare ahead. Desserts served in glasses look gorgeous and they take some of the admin out of your meal as you can do exactly that – prep ahead!
This here is a fridge cheesecake with a Christmas pudding smashed into it. It’s a light fluffy dessert -much lighter than it sounds- with all the delicious flavours of Christmas.
You will need:
- 1 store-bought Christmas pudding
- Fridge cheesecake mixture, which I’m giving you the recipe for here
- Some berries or cherries to garnish
For the fridge cheesecake you will need:
- 1 tin of condensed milk (385g)
- Half a cup of lemon juice
- 1 tub of smooth, cream cheese (250g)
- 125 ml of cream, whipped
All you need to do is make the fridge cheesecake ahead, without the base. Mix all of the above together and then refrigerate it. Just before you assemble the dessert smash a store bought Christmas pudding into it. (By this I mean, break it up in your fingers and then stir it in roughly).
Keep that covered and chilled until the very last possible moment- you don’t want the glasses of pudding sitting around in your fridge for too long, as after a while, these things tend to taste like “fridge”. (It’s true!!)
Once you do scoop it into glasses, cover those with cling film too. Garnish with a few berries or cherries, and edible glitter for a bit of festive sparkle!
