Breakfast for the holidays

At last, I find myself on holiday and back in my favourite place by the sea, where I can begin to unwind, prepare for Christmas and spend time in the kitchen cooking for friends and family. This will hopefully result in more recipe sharing!

Today the wind is howling, so we are having breakfast indoors and we can take time over cooking. This is a simple French toast, with caramelised onion and warm Camembert cheese. I’ll share the recipe here for the caramelised onion. It’s a great holiday recipe to add to Hamburgers, Boerewors rolls, cheeses or pates.

Here’s what goes in:

  • 1 onion, sliced
  • butter for frying
  • 1 tablespoon of brown sugar
  • 1 tablespoon of balsamic vinegar

How to do it:

Finely slice and sauté the onion in the butter until softened. Then add the brown sugar and balsamic vinegar to begin the caramelisation process. Once these onions take on a dark brown colour and rich, sticky consistency, they are done.

Use them warm or at room temperature. If you refrigerate them, they will solidify. You can just warm them for a few seconds in the microwave to get the consistency right again.
