Chocolate Fudge Cake

My daughter Morgan loves baking – probably more than I do! When cakes are now needed for any occasion, we look to her. And she often comes up with the most delicious creations. This is no doubt a combination of recipes from Tik-Tok creators and the like, and hopefully a little bit of something learnt from my kitchen, but it is most definitely our latest favourite chocolate cake!

Here’s what goes in:

  • 2 cups of cake flour
  • 2 cups of castor sugar
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon baking powder
  • 1 cup of cocoa powder, sifted
  • 3/4 cup canola or vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup of buttermilk
  • 1 cup of coffee, freshly brewed

How to do it:

Preheat your oven to 180°C and grease and line two round cake pans (around 20cm). Using a cake mixer, combine the eggs and sugar until they are thick and pale yellow. Add the dry ingredients, followed by the oil, buttermilk, coffee and vanilla. Pulse this slowly as you add the ingredients to prevent the flour from flying everywhere and making a mess. Once everything is well incorporated, pour the batter evenly into the two tins. Bake for around 40 minutes or until an inserted skewer comes out clean.
